A couple of nights ago I was cooking dinner and my husband told me not to turn on the oven. It was 90 F outside so I understood his point.

This is the time of year that turning on the oven just seems counterproductive. We ate cold (cooked) chicken and felt good about ourselves.

These waffle iron potato cakes allow you to “bake” without the oven! Try my waffle iron apple or savory corn meal waffles for other hot weather baking ideas.

The only ingredients are eggs and shredded potatoes. You can shred your own with a box grater or the grating attachment of your food processor.

If you are super lazy (like me), you can buy frozen hash browns. I managed to find some inexpensive ones at Whole Foods

You want to look for ones with nothing added. You don’t need oil or salt to make these waffle cakes. These are shredded potatoes that have been grated for your convenience.

I believe that if convenience foods such as frozen shredded potatoes or pre-cut butternut squash help you with a healthier diet – why not? I’m not grinding my own wheat or keeping bees for my honey!

What I am saying is plenty of the ingredients we use is already processed in some way before we use it. The question is what kind of processing keeps the nutrients in the food intact. Freezing is a gold standard for keeping food fresh when stored.

I am always cruising the freezer section for healthy foods that I can store for those times when I can’t make it to the store.

I have frozen peas, spinach, corn always in my freezer.

Makes 2 large or 4 small waffles
Prep time: 5 min
Cook time: 6-8 min

Ingredients

3 cups frozen shredded potatoes, thawed
2 large egg
salt and pepper to taste

Instructions

Heat waffle iron and spray with non-stick spray. Beat egg in a small bowl and mix in potatoes. Spoon mixture in 4 spots on waffle iron and sprinkle with salt and pepper. Cook for 6-8 minutes until crispy. Serve immediately.
