  • 1 massive candy potato (about 12 ounces)
  • 1 massive bell pepper, sliced
  • 1 medium pink onion, sliced in rings
  • 1 can (12 ounce) can tomatoes with inexperienced chilies
  • 1 cup lower-sodium vegetable or hen broth
  • 1 teaspoon floor cumin (optionally available)
  • ¼ teaspoon salt
  • 1 pound cod fillets (or some other fish!)

Chop candy potato into ¾-inch cubes (don’t peel candy potato.)
